Peaches & Cream Pudding
I got this recipe from Kraft's Food Magazine a few years ago. Since I'm trying to explore the whole dessert making world I thought I should go back to my old cook books that are compiled with recipes I've collected over the pass 5 to 6 years. LOL It's such a waste of time to collect all these wonderful recipes and not try them. We truly enjoyed this dessert!
Ingredients:
*1 cup milk
*1 can (15oz) peach slices in natural juice, drained, juice reserved
^1 package (2-serving size) JELL-O Vanilla flavor instant pudding & pie filling
Mix milk and reserved peach juice in medium bowl. Add dry pudding mix. Beat with wire whisk 2 min. or until well blended. Stir in peaches. Refrigerate until ready to serve.

ReplyDeleteYou can make this vegetarian by making your own vanilla pudding (pudding mix contains gelatin)...

3 egg yolks
2 cups whole milk
1/3 cup superfine sugar
2 tbsp corn starch
pinch salt
2 tbsp butter (no substitutes)
1 ½ teaspoons vanilla
Directions
Whisk egg yolks with 1/4-cup of the milk to help them strain through a fine-mesh strainer to get any bits of egg white protein.
Mix this strained egg mixture into the remaining milk in a sauce pan.
Add the sugar, cornstarch and salt.
Cook, whisking constantly, over medium heat until it comes to a simmer.
Whisk in the butter & vanilla just until the butter is completely incorporated.
