Mini Taco Bowls
I found this recipe in Kraft Foods magazine about a year or so ago and just getting around to trying it! It was truly delicious! My bowls didn't come out nice and neatly as the picture in the magazine but it turned out darn good to me! haha I added some Taco Bell Seasoning to the ground beef mixture.
Ingredients:
8 Taco Bell Home Originals Flour Tortillas (you can use any brand you like)
1 pk Taco Bell Taco Seasoning
1 lb. extra lean ground beef
1 cup of Salsa (Simply Salsa with my own twist "see notes below")
1/2 cup Kraft Shredded Cheddar Cheese
5 lettuce leaves
1 large tomato
1/4 cup Kraft Ranch Dressing
Preheat oven to 350 degrees. Microwave tortillas on HIGH 30 sec. or until softened.
Press 1 tortilla into each medium muffin cups to form a bowl. Carefully fold edges of tortilla back to keep an opening for the filling. Bake 10 min.
Meanwhile, brown meat in large skillet on medium heat; drain. Stir in Taco Seasoning (following instructions on package) and the stir in salsa; bring to boil. Reduce heat to medium-low; simmer 10 min., stirring occasionally.
Cut lettuce with kitchen shears (about 2 cups chopped).
Spoon about 1/4 cup of the meat mixture into each tortilla bowl.
Top evenly with cheese, lettuce and tomatoes. Drizzle with dressing.
**Notes: Instead of using reg. can diced tomatoes I used 1 can (15oz) of diced tomatoes with green chilies.
