This morning I took out some chicken breast and was undecided on what to make. I knew I was in the mood for some cheese and didn't feel like standing over the stove! So whatever I was going to make it was going to be in the crock pot! Well this was pretty simple...a no fuss meal! ;) Plus I had to tackle the girls hair after dinner too...whew! The girls played a part in making dinner tonight. They made the blueberry muffins using Betty Crocker's Blueberry Muffin Mix.
We had roasted veggies, salad and blueberry muffins with the cheesy BBQ chicken. For dessert we had Louisiana Crunch Cake and butter pecan ice cream! I was too full for dessert and still is! But the girls...I don't know where they find the room! SMH!
Ingredients:
3 boneless/skinless chicken breasts
1/2 or more bottle BBQ Sauce
7 slices bacon, cut in half
6 slices Swiss cheese
1 med. onion, sliced
S&P, to taste
1/2 tsp red pepper flakes
1/2 tsp oregano
Place onions and chicken in the crock pot; and spinkle the seasoning on top on the chicken. Cover with BBQ sauce. Cover; cook on HIGH for 6 hours or less until chicken is no longer pink.
Before serving, cut bacon slices in half. Cook bacon in the oven 350 degrees. Place 3 slices cooked bacon on each piece of chicken in crock pot. Top with cheese slices. Cover; cook on HIGH until cheese melts.

That is a very interesting chicken recipe! How did the bbq sauce taste with the Swiss cheese? Tell the girls that the blueberry muffins look fantastic! They are really good at that baking stuff.
