Cajun Roasted Tilapia w. Potatoes & Veggies



This was really good!  I didn't have to serve this with anything else really but I did.  I served this with Grilled Cajun Shrimps and salad.  Delicious!!!

Ingredients:
1 lb fresh tilapia fillets
1 green pepper, sliced
1 red pepper, sliced
1 med. onion, sliced
3 cloves garlic, chopped
1 Tbsp lemon juice
1/4 cup butter, melted
1/2 cup EVOO
6 to 8 new potatoes, cut the large potatoes in half
3 Tbsps freshly grated Parmiginao-Reggiano cheese


Homemade Essence

Preheat oven to 400 degrees.  Rinse fish, scale if necessary, pat dry with paper towels, and set aside.  Mix butter and lemon juice in a bowl and brush butter mixture on both sides on the fish and season with essence.

Use about 2 Tbsps of oil to brush liberally the bottom and sides of a rectangular oven dish large enough to hold the fish and potatoes.  In a bowl, whisk oil, essence and lemon juice; blend well.  In a bowl, mix the garlic, peppers, onions, and potatoes together then pour in oil mixture (save a little just in case you have to add more during cooking time) and toss to coat.

Arrange about half the potatoes in the bottom of the dish, overlapping if necessary and spreading them out to distribute them evenly.  Sprinkle with half the grated cheese.  Set the fish on top of potatoes and cover with the remaining potatoes and grated cheese.  Bake for about 40 minutes, or until the fish and potatoes are thoroughly cooked.
