Mint Sauce

This sauce is great for lamb.  I made this a few times years ago...back in 2007.  Sorry I don't have any pictures to show but it is truly delish!  I need to really get back into the kitchen so I can capture some pictures to add to my old recipes blogs.  Enjoy!


Instructions:

Dissolve 1.5 Tbsps of sugar in hot water, when cool add 1/3 cup of chopped mint and half cup of vinegar.  Malt vinegar is preferred.

Homemade Tartar Sauce

Ingredients:

1 cup mayo
1 Tbsp sweet pickled relish
1 Tbsp minced onion
2 Tbsps lemon juice
Salt and pepper, to taste

In a small bowl, mix the 1st three ingredients together, stir in lemon juice and season with S&P.  Refrigerate for an hour before serving.

Sweet & Sour Sauce

This sauce goes well with chicken, ribs whatever you like!  I've used this recipe to make sweet and sour chicken in my crock pot before and it was really good.  I've also made sweet and sour veggies using this recipe as well.  

Ingredients:
1/3 cup rice vinegar
4 Tbsps brown sugar
1 Tbsp ketcup
1 tsp soy sauce
2 tsps cornstarch mixed with 4 tsps water

Mix the vinegar, brown sugar, ketcup, and soy sauce together and bring to a boil in a small pot.  Mix together the cornstarch and water, add to the other ingredients and stir to thicken.

Lime Butter Sauce

I made this last night to put over my Stuffed Red Snappers and it was delish!!!!  I will use less lime juice next time because it was really overwhelmed but once blend with the fish and spicy all was well.  

Ingredients:
1 large garlic clove, chopped
1/4 cup fresh lime juice
1 tsp salt
1/2 tsp black pepper
1 stick unsalted butter, melted

Puree garlic with lime juice, salt and pepper in a blender or food processor until smooth.  With motor running, add melted butter and blend until emulsified, about 30 seconds.

Spicy Sweet & Sour Dipping Sauce

America's TEST KITCHEN

I use this dipping sauce for the Thai-Style Grilled Chicken that I made! Oh man...this dipping sauce is great! I'm going to find what else I can use this sauce with...


Dipping Sauce:
1 teaspoon red pepper flakes
3 small cloves garlic , minced or pressed through garlic press (1-1/2 teaspoons)
1/4 cup distilled white vinegar
1/4 cup lime juice from 2 to 3 limes
2 tablespoons fish sauce
1/3 cup granulated sugar



Whisk ingredients in small bowl until sugar dissolves. Let stand 1 hour at room temperature to allow flavors to meld.

Ginger Apricot Sauce

This is the Sauce I made to serve with the Appetizer Egg Rolls for my housewarming!

Ingredients:

1/4 cup apricots, dried
1/4 cup sugar
1 tsp ginger
1/4 tsp salt
1 Tbsp lemon juice

Combine the apricots, sugar, ginger, and salt with 3/4 cup water in a small saucepan and bring to a boil. Reduce heat and simmer, uncovered, for 5 minutes. Pour the mixture into a blender container or food processor. Add lemon juice, cover and process until smooth. Serve warm.

Jalapeno Mayonnaise

I was browsing through my Rachael Ray's magazine last August 2009 and came across this Georgia Peach Chicken Sandwiches recipe and just had to try it! This was the Jalapeno Mayo spread that was used for the sandwiches. The original recipe called for 3 Tbsps finely chopped pickled jalapeno chiles but I couldn't find it at the market so I just substituted it with the ingredients listed below. Since I had plenty left over, I used the rest as dressing the next day for my salad...truly delicious folks!

Sweet Relish and jalapeno pepper hot sauce

Ingredients:

1/2 cup mayonnaise
3 Tbsps sweet relish
Jalapeno pepper hot sauce

In a bowl, mixture ingredients thoroughly and refrigerate until ready to use.
