Grilled Jerk Shrimp and Chicken Rasta Pasta


Hey guys!!!  It feels so good to be back in the blogging biz!!!  Whew...life has truly been busy for me and my family. Been through a lot of rough times but I'm pushing my way through.  I have truly missed you guys and looking forward to enjoying some great meals with you all.

Well today I am bringing to you a newly tried recipe.  Today I am sharing this Grilled Jerk Chicken and Shrimp Rasta Pasta dish.  You can choose any type of protein that you like...steak, oxtails, lamb you name it.  I've heard so much about this Rasta Pasta from my family and friends in New York and I just had to try it for myself.  I made this last Monday and my family truly enjoyed it.  As you all know, measurements is not my thing but I'm gonna try my best with this recipe.  I'm an eye baller folks!  HaHa!  In the ingredients picture above crushed red pepper flakes, green pepper and chicken bouillon are missing.  I also decided not to use the dried jerk seasoning.  With this dish I made grilled corn on the cob with a Herb Cajun Garlic Butter and a salad.  Dinner was truly amazing!  I will be making this a part of my frequent meals in my home from now on.


Ingredients (The seasonings listed here is mainly for the veggies mixture.)

* 3 boneless skinless chicken breast, cut into bite size pieces
* 1 lb jumbo shrimps
* 1 box penne pasta
* 1 red pepper, thinly sliced
* 1 green pepper, thinly sliced
* 1 yellow pepper, thinly sliced
* 1 orange pepper, thinly sliced
* 1 large onion, thinly sliced
* 5 pieces of a garlic clove, minced
* Extra-virgin Olive Oil for sautéing
* 1/2 tsp salt or to taste
* 1/2 tsp black pepper
* 1 tsp jerk seasoning


Chicken and Shrimp seasoning (Since I am allergic to shellfish, I seasoned these separately and used the same amounts for both proteins.  Maybe a little less of the shrimps depending on how many pounds you have.)

* 2 Tbsps of jerk seasoning
* 1 Tbsp Cajun seasoning
* Kosher Salt & Black Pepper, to taste
* 1 Tbsp olive oil
* 1 Tbsp chicken bouillon (Do not add to the shrimps)
* 1 1/2 Tbsp garlic powder
* 1 1/2 Tbsp onion powder
* 1 Tbsp Herb d' Provence
* 1/2 Tbsp paprika
* 1/2 tsp dried thyme (Fresh thyme is recommended but I didn't have any on hand.)
* 1/2 tsp dried fennel
* a pinch of red pepper flakes


Cream Mixture

* Heavy Whipping Cream
* Approximately 1 1/2 cup of Italian blended cheese (I just added until I got the consistency that I wanted for the creamy sauce.  You don't want it too thick.  Just thick enough to have a lightly creamy coating on the pasta and protein that you are using for this dish.)
* 1/2 Tbsp Cajun seasoning
* pinch Herb d' Provence
* pinch dried parsley

Instructions:

Wash and clean chicken and shrimps.  Place chicken and shrimps in a bowl and season (add olive oil).  You can place in zip lock bags and marinate for a few hours or over night.

Boil pasta in a pot with some olive oil according to box directions to al dente.  Drain pasta and run under cool water to stop them from cooking and set aside.

Slice onions, peppers and garlic (minced) and set aside.  Season veggies with

Heat up your grill.  I used my indoor/outdoor George Forman grill and sprayed it with olive oil cooking spray.  Grill chicken for about 4 to 5 minutes per side and shrimps about 2 minutes per side.  Remove protein from the grill once chicken is brown and shrimps are slightly reddish pink color then set aside.  Let chicken rest and then cut chicken into bite size bites.

Season the onions and peppers with olive oil, salt, pepper, jerk seasoning.  Heat up some oil in a sauce pan and sauté onions and peppers for about 5 minutes or so.  Add minced garlic and cook for about 2 to 3 minutes on low heat in olive oil.  Drain and then set aside.

Return the veggies back to the heated sauce pan.  Slowly pour in about 1 and a half cups of heavy cream and stir.  Add more as needed and keep stirring until the cream starts thickening up.  Taste the sauce to see if it's too your liking.  If not, add a little more seasoning.  Now add in the chicken and Shrimps to the heavy cream and veggie mixture in the pan.  Coat all of the chicken and shrimps well and add in the cheese.  Stir and bring to a simmer on medium low heat.  At this point, if more heavy cream is needed, add, stir and bring back to a simmer.  Add the cheese and the pasta and then stir.  Bring the pan to a simmer on med low heat.  Once the pan comes to a simmer, remove from the heat and serve.

During making this sauce, I had to add the rest of the heavy cream to make enough sauce to coat the chicken, shrimps and pasta.   It all depends on how much chicken and shrimps that you add to your pan.  I didn't use all of the chicken that I grilled for this dish.  I saved the rest to make a grilled chicken salad for lunch another day.

Here's the dish!  I know from the looks of things that it may look like this dish is very spicy and salty but it is not.  Trust me!  Please check out my YouTube video on how to make this lovely dish and you will see that I only added a little bit of salt to this dish.  And the heavy cream brings down the heat from the jerk seasoning.

Semi-Jerk Style Chicken

Good Morning everyone.  I needed to take a break with my school work this morning.  So I decided to turn to my comfort's me the most...that's posting some delicious recipes and sharing then with you guys.  I have so much to share with you guys and I am finding it hard to keep up with up dating my blog these days. 

Anyway, I made this back in May of 2006.  I found this recipe I think in one of my Kraft magazines at the time and I truly enjoyed it.  I called this Semi-Jerk because this was far fetch from other Jerk Sauces I have tried before.  By in no means was it the worse either...it actually was pretty good.

Ingredients:
-1 envelope Good Seasons Italian Salad dressing and recipe mix
- 2 Tbsp firmly packed brown sugar
- 2 Tbsp oil
- 2 Tbsp soy sauce
- 1 tsp ground cinnamon
- 1 tsp ground thyme
- 1/2 cayenne
- 1 broiler fryer chicken, approx. 2 1/2 pounds, cut up (you can use chicken breasts or wings as well)

Mix all ingredients except chicken in a large shallow dish until well blended.  Add chicken; turn over to evenly coat both sides.  Cover and refrigerate 1 hour to marinate.  Drain; discard marinade.

Preheat greased grill to medium heat.  Grill chicken 40 to 45 minutes or until cooked through, turning frequently.

Jamaican Beef Patties

Well I'm getting ready for my Housewarming/Birthday Celebration on June 11th!  I'm going through my cook books trying to finalize my menu and put together my shopping for next month.  Time to get started!!!!  I tell ya, I'm sooooo excited about this gathering because I'm going to see some old time friends and family that I haven't seen in years!  Some are traveling miles just to come see me and I'm sure my delicious food plays a big part!  LOL!  But all jokes aside I get all choked up every time I buy something or start arranging things for this even!   I'm looking forward to a great time next month!  Great friends, delicious food, wine and music...you can't expect nothing but the best time ever!!!!

Which brings me to this recipe which was a big hit at my previous Housewarming about 6 or 7 years ago.  I'm thinking about making these next month but not sure.  I just wanted to share this recipe with you guys because it was truly delish.  I can't remember where I found this recipe from (I found it a along time ago.) but I found it online some where.  One ingredient I didn't use was the Jamaican rum.  Maybe I'll contact Jazzie's dad to see if he can get a hold of some one of these days but for right now I'll just do without it. 


 Ingredients: (Yields 48 appetizer size patties) *Double ingredients for more.
*1 pack puff pastry, (I used something else but can't think of the name right now) Update: I found them!  hahaha
*1 Tbp Jamaican rum
*1/2 lb ground beef
*1/2 cup diced onion
*1/2 cup green onion
*2 Tbsps diced jalapeno peppers
*1 tsp thyme
*1/4 cup curry powder
*1 tsp salt
*1 tsp white pepper
*1/4 cup bread crumbs

In a sauce pan, begin to brown the ground beef over medium heat along with the onion, green onion and the jalapenos.  Add thyme, curry powder, rum, salt and pepper.  Combine and cook for an additional 3 minutes turn off the heat, add the bread crumbs and let cool.

Remove the puff pastry from the freezer about 20 minutes prior to using it.  Lay out the puff pastry sheets and cut out 48 circles with a 2 inch cookie cutter.  Remove the excess dough scraps and using a rolling pin, roll out each circle slightly.

In the center of each dough circle, place a tsp of the cooled meat mixture.  Fold over the dough to form a half-moon shape.  Crimp together the edges with a fork.  Place on a cookie sheet and place in a preheated 400 degree oven for 15 to 20 minutes or until golden brown.


I didn't take a picture because I was too busy in the kitchen at that time.  It was a crazy moment in the kitchen with my Bestie, Ebony Simpson!  LOL!  We still laugh about it this very day!  I couldn't find my cook books...OMG it was a crazy moment but everyone had a great time!

Caribbean Fried Chicken

Happy Day After Thanksgiving!  Today is Black Friday and I'm at home spending quality time with my two beautiful girls!  I hope everyone enjoyed their Thanksgiving.  Mines was really great...just me and my children.  I had a great spread which I will share with you guys later.

I had a wonderful Wednesday afternoon!  The boss surprised everyone and let us go home early on Wednesday.  Woo Hoo!  That gave me more then enough time to finish up my Thanksgiving shopping!  Going through my cook books I ran pass a recipe that I've been meaning to try.  So before I started cooking my Thanksgiving dinner I had to make dinner for the girls and gave this recipe a shot and it was totally the BOMB!!!!  I was doing so many things in the kitchen I forgot to take a picture.  :(  I apologize. This recipe is truly easy and great for something quick to make on those crunch for time days.  I served this with some navy beans and jasmine

Ingredients:

1 Tbsp orange juice
1 tsp dried thyme (you can use fresh thyme)
1/2 tsp garlic powder
1/2 tsp ground cinnamon
1/4 tsp dry mustard
1/8 tsp ground allspice
1 tsp cayenne (Optional)
4 boneless/skinless chicken breast (You can use any type of boneless chicken with or without the skin)
2 Tbsps butter

Combine all ingredients except chicken and butter in a small bowl; rub onto both side of chicken.  Heat large non-stick skillet over medium-high heat until hot; reduce to medium.  Add butter; heat until melted.  Cook chicken 8 to 10 minutes or until browned and no longer pink in center, tuning once.

Appetizer Jamaican Beef Patties

Good Morning!!!!  I'm feeling really good this AM!  I'm about to start organizing stuff around my new home!  I'm truly Blessed to finally be in my own space again.  It has been a long/stressful journey for me and my girls but we made it through.  I still have a long way ahead of me but I've made it through the worst part so I thank God for that!!!  I still have tons to unpack and I can't seem to find my cord to my camera so I'm unable to upload my pics at this time!  I still have tons of recipes to share with you guys!

I've made this recipe several times and it's always the highlight on the finger food list!!!  The first time I made this was at my Housewarming party years ago and everyone turning enjoyed it!  Unfortunately, I don't have a pic to share with you at this time but I will be making this again and will be sure to take pics when I do!  Enjoy your Saturday!  ;)

Yields 48 appetizer size patties

1 pk puff pastry (or you can use those Goya frozen disc's.  I use those often)
1 Tbsp Jamaican rum
1/2 ground beef
1/2 c. diced onions
1/2 c. sliced green onion
2 Tbsps diced jalapeno peppers
1 tsp thyme
1/4 c. curry powder
1 tsp salt
1 tsp white pepper
1 tsp cayenne pepper (Optional...I like mines spicy)
1/4 c. bread crumbs

In a saute pan, begin to brown the ground beef over medium heat along with the onion, green onion and the jalapenos.  Add thyme, curry powder, rum, salt and pepper.  Combine and cook for an additional 3 minutes, turn off heat, add the bread crumbs and let cool.

Jamaican Jerk Chicken

Oh man do I love me some Jerk Chicken! The girls were just cleaning the snow off the grill outside and I was wishing it was at least spring so that I could light that baby up and start grilling! *sighs* My mouth is truly watering right now! This recipe is truly delish!!!


1 Tbsp ground allspice
1 Tbsp dried thyme
1 1/2 tsps cayenne pepper
1 1/2 tsps pepper
1 1/2 tsps ground sage
3/4 ground nutmeg
3/4 ground cinnamon
2 Tbsps garlic powder
1 Tbsp sugar
Salt
1/4 cup extra virgin olive oil
1/4 cup soy sauce
3/4 cup vinegar
1/2 OJ
1 lime juice
1 Scotch Bonnet Pepper or habanero
3 green onion, finely chopped
1 onion, finely chopped
4 to 6 chicken breasts

After cleaning, poke wholes in chicken. Deseed and finely chop scotch bonnet pepper. In a large bowl, combine the allspice, thyme, cayenne, pepper, sage, nutmeg, cinnamon, salt, garlic powder and sugar. Slowly whisk in the olive oil, soy sauce, vinegar, OJ and lime juice. Add bonnet pepper, onion and mix well.

Add the chicken, cover and marinate for at least 1 hour, longer if possible. Grill on each side for 10 - 15 minutes or until fully cooked. While grilling, baste w. marinade.

Pigeon Peas and Rice



I truly love this dish. The aroma and flavors are so welcoming! Sorry I don't have any pics to share but the next time I make some I will definitely take a pic. Jazzie's dad showed me how to make this dish years ago and I've been making it ever since. As time went on, I've added extra ingredients to what he showed me for my liking. Measurements varies depending on the amount you'd like to make.

Ingredients:
2 Tbsp canola oil
1 Tbsp brown sugar
1 can coconut milk
4 ounces dried pigeon peas (soaked over night)
2 cups rice
1 small onion, chopped
1 clove garlic, chopped
1/4 tsp dried thyme
1 scotch bonnet pepper (whole, do not chop)
Salt & pepper, to taste
water

In a stew pot, heat 1 Tbsp oil. Stir in the brown sugar until it has almost caramelized. Add peas, can of coconut milk and enough water to make four cups of liquid, onions, garlic, thyme, remaining oil, salt, pepper and bring to a boil. Lower heat and cook for about 1/2 or 1 hour, until peas are softened. Add rice and stir for a minute. Reduce heat to Medium-low. Place scotch bonnet pepper on top of liquid and cover tightly for 30 minutes or until rice is cooked.

Remove scotch bonnet pepper before serving.
