Coconut Custard Pie




OMG...now you know I don't like baking but this was truly inspiration!!! I had my Grandmother on my mind yesterday morning...may she R.I.P.! That woman could cook her butt off!!! I truly miss her and this pie was one of my favorite desserts...one of many that she use to bake. Yes, this is my Grandma who made me try my first Chicken Foot and I've fell in love ever since. Well I wanted to feel her presence and keep her close yesterday so I decided to make this pie. I can't remember where I found this recipe but I truly want to thank the person for sharing it. Betty Swain for Bear, Delaware! I don't know you but this was one easy recipe and truly delish!!!! I know that I cut the recipe out of one of the many magazines that I receive. I just forgot to write the name of that magazine down. So I want Betty to know that she was part of a special moment in my life yesterday and many more days to come. Each bite was a delite and my girls truly enjoyed it. We sat at the table laughing at the stories about Ms. Sweetie (my Grandma). I'm sure she was looking down on us smiling! I just ate another piece and it even taste better today than yesterday. I just might whip up some heavy cream tonight to put on top of the slices. Yummy! Enjoy!!!!

Ingredients:
*Betty used Pastry for her pie crust.

1 cup flaked coconut, chopped
3 eggs, beaten
2 2/3 cups milk
2/3 cup sugar
3 Tbsps all-purpose flour
1 tsp vanilla extract
1/2 tsp salt
1/4 tsp ground nutmeg
1 frozen deep dish pie crust


Line the unpricked pastry or pie crust (Which as you can see, I didn't follow directions but it turned out just fine. LOL) with a double thickness of heavy-duty foil. Bake at 450 degrees for 8 minutes. Remove foil; bake 5 minutes longer. Sprinkle coconut over crust; set aside.

In a large bowl, combine the eggs, milk, sugar, flour, vanilla and salt. Pour over coconut; sprinkle with nutmeg. (Once again, I didn't follow the instructions and I mixed the nutmeg in the mixture. LOL) Bake, uncovered, at 350 degrees for 45-50 minutes or until a knife inserted near the center comes out clean. Cool on a wire rack. Refrigerate leftovers.

 
 

I should have covered the crust edges with foil because as you can see the edges burnt. I knew better but hey, practice makes perfect right? It was still delicious!

Fun Filled Ice Cream Bowl


I don't recommend this if you're trying to watch your weight! LOL! I sure would never indulged more than once. I use to get requests for these types of snacks at 3am! SMH! Most would request for normal stuff like water, an apple, you know...things of that nature! OH NOOOOOO...not my Ex! It was either a sandwich, eggs over easy on toast, cereal with wheat germ or something like this...vanilla ice cream, with vanilla creamed cookies, strawberries and a drizzle of Carmel on top! Is this what body builders eat to keep their weight up? LMAO! Anyhow, I just thought I'd share...the things you do for the love of Food! In this case, junk food! hahahaha!  Not even sure if I should put this under dessert.

Root Beer Floats

I am so craving one of these right now!!! I haven't made these in a long time. My daughter, Jazmire, has a birthday coming up (January 18th) and having a Slumber Party!!!! She will be 9 years old! Root Beer Floats are one of my girls favorite treats!!! Well yes it's winter but there's no special time to have a float so this is one of the things that's on the menu for this event!!!! What better way to share one of your favorites with some of your special friends. She's really excited and so am I!!!  I will post the results to this event...wish me luck!  ;)

There's no need for a recipe...the pictures tells it all! ;)

Quick and Easy Pudding Dessert


One day I was reading my friend KB's Sugar-Free Hot Chocolate Pudding recipe blog I wanted some. That is when I thought I had all the ingredients on hand. Anyway, I made do with what I had and settled for the first thing that came to mind. I told the kids what I had in mind, they agreed and so it was. LOL!  Very simple and easy to make!  Yummy too!

Ingredients:
Jell-O Chocolate Pudding Heavy Cream
Milk
White Chocolate
Confectioners Sugar
Topping of your choice (nuts, sprinkles, etc.)



Add confectioners sugar and heavy cream in a mixing bowl; whisk until liquid becomes thick and foamy.  Prepare pudding as directed on the box.  Place in dessert bowls, top with whipped cream, shaved chocolate and your desired topping.  I put nuts & chocolate on mines and chocolate sprinkles on the other two for the girls.

Jill's Butterscotch Strawberry Dessert

My girls truly love this dessert!


Ingredients:
1 pint strawberry's, rinsed and sliced
1/4 powdered sugar
Edy's slow churned rich & creamy vanilla ice cream
1 cup nestle butterscotch morsels

Toss sliced strawberries in bowl with powder sugar and set a side. In microwaveable glass bowl, melt morsels for approximately, 2 to 3 minutes high in microwave, stirring after each minute.

Scoop ice cream and place on dessert dish or in bowl, top with strawberry and drizzle butterscotch on top.

Pecan Pie

Christmas 2008: My friend, Kevin begged me to baked him a pecan pie for Christmas. All because someone gave him a slice one day. As I have stated before, I am not a baker but I'm not bad at it either. So since he gave me the money for the ingredients, I was tied into a legal binding contract! LOL! That is how it works right? SMH! The things I do for my friends but it's worth it! They are good to me and my girls so this is nothing. Besides...I enjoy experimenting anyway! ;)

Browsing the Internet for a recipe I finally came across one (can't remember which site I found it on). While reading the recipe I thought to myself (ewwww...this is going to be to sweet for me. Oh well, it's for a friend and I did promise I'd make it for him.) I'm not into the sweets area. I'm more of a savory girl and a chip lover! Well the pie turned out great and it wasn't as sweet as I thought it would be at all!


Put 1 cup of pecans in the microwave for 1 minute. Take out and turn them over and put back in for another minute. If they don't look done, put them in for another minute.

Chop the pecans so that each has been chopped in half.

Pie Crust (I brought I frozen one):
- 2 cups all-purpose flour
- 1 tsp salt
- 1 Tbsp sugar
- 6 Tbsps unsalted butter
- 6 Tbsps shortening
- 6 to 8 Tbsps ice water

Mix in a large bowl 2 cups all-purpose flour, 1 tsp salt and 1 Tbsp sugar. The mix in 6 Tbsps butter, 6 Tbsps shortening, and 6 to 8 Tbsps ice water.

Wrap pie crust in plastic wrap; then place in the frig for at least 20 minutes or as long as it takes you to make the pie filling.

Pie Filling:
- 1 cup white corn syrup
- 1 cup brown sugar
-1/3 tsp salt
-1/3 cup melted butter
-1 tsp vanilla
-3 eggs
-2 cups roasted pecans

Melt butter; preheat oven to 350 degrees. Mix 1 cup corn syrup, 1 cup brown sugar, 1/3 tsp salt and tsp vanilla in a bowl and mix. Slightly beat eggs and the add eggs to the batter and stir well.

Take pie dough out and roll it out flat. It should be 1/8 of an inch in thickness. Apply more flour to rolling pin. Wrap the dough around pin and unroll it into pie pan. Cut off excess crust.

Pinch around the edge so it folds in half. Now go around the edges and pinch to create a wave shape. Pour in filling. Sprinkle 2 cups of pecans on the top of the pie filling. Some pecans will sink into the filling, while others will remain on top. Bake for 1 hour and 10 minutes.

After pie has been in over for about 30 minutes, take it out, put foil around the edges to keep from burning. Return to oven. After an hour, stick a knife in the middle to test for doneness. If the knife comes out clean, its done.

Peaches & Cream Pudding

 


I got this recipe from Kraft's Food Magazine a few years ago. Since I'm trying to explore the whole dessert making world I thought I should go back to my old cook books that are compiled with recipes I've collected over the pass 5 to 6 years. LOL It's such a waste of time to collect all these wonderful recipes and not try them. We truly enjoyed this dessert!

Ingredients:
*1 cup milk
*1 can (15oz) peach slices in natural juice, drained, juice reserved
^1 package (2-serving size) JELL-O Vanilla flavor instant pudding & pie filling

Mix milk and reserved peach juice in medium bowl. Add dry pudding mix. Beat with wire whisk 2 min. or until well blended. Stir in peaches. Refrigerate until ready to serve.
